Overproof pan with lid

Ingredients

Two good quality pork sausages

A sausage length of salami sliced

One red onion sliced

One pepper sliced

½ or 1 tsp of red chill fakes in white wine vinegar

1 tsp of wholegrain mustard

1 tsp dried oregano or mixed herbs

A glass of red wine

Tin of chopped tomatoes

Tin of cannelloni beans drained

Optional carrot sliced

Perheat over gas 3 170C or 150C fan

Fry sausages in overproof pan on hob with a bit of oil until cooked then set aside and heat up salami and set aside

In the same overproof pan on hob add onion and carrot on a low heat for 3 minutes

Add pepper, red chill fakes, wholegrain mustard, dried oregano or mixed herbs and glass of red wine for 3 minutes

Then add chopped tomatoes and cannelloni beans for 5 minutes

Add some salt and pepper add the sausages and salami to the pan and mix

Put in the over for 1 hour
